About Cyser & Cider

Hard cider is produced from the juice of apples that have been fermented. The typical hard cider is one whose original fruit is made up of several types of apples of varying sweetness levels and acid levels including what are classified as bittersweet, bittersharp, sweet, sharp etc.

Each of these apples provides a necessary component character for the particular cider. Too much of one type and the cider will either be insipid, too bitter or too astringent. We believe that we have produced a blend of apple juice that is just perfect but especially so when blended with select honey to produce what is traditionally called 'Cyser'.

Our Cyser is a blend of 50% select apple juice with 50% premium honey. For our fruit flavored ciders we add black cherry, peach, blackberry, raspberry or pear juice to the mix. This is fermented together with premium champagne yeasts until it reaches the desired level of sweetness and alcohol, sometimes up to 10% or higher, but always a higher than hard cider sold on the market today at around 7% - very unique to the cider industry.

We then filter the cider to remove any yeast and bottle or keg the product. The resulting ciders are of crystal clear quality and maintain the freshest tastes possible without the introduction of any additional sulfites which ruin the taste of a good cider.

Either draught by the keg or bottled conditioned or even still, they are each great on their own or served with your favorite foods.

Either way they offer a food pairing option that is unsurpassed by either grape wine or beer or even regular hard apple ciders.

Don't be fooled by cheaper imitations that use malt liquor as their base for 'fruit flavored' beverages.
